High gritty tannin needs fat and protein to bind to, and the wine's balsamic, volcanic savouriness meets char rather than fighting it. The acidity is high enough to handle the tomato salsa, which would flatten most reds of this weight.
Where to take them next
The detail — if they ask
Hand-harvested, macerated before fermentation, then twenty-five to thirty days on the skins at 22–24°C with the cap punched down every six hours. Twenty-four months in new 225-litre barriques. Deep, gritty and structured — the tannin is the point.

- Based at Acerenza on the eastern flank of Monte Vulture, championing Basilicata's native grapes in one of Italy's most remote wine regions.

- The slopes of Monte Vulture, an extinct volcano. Soils are volcanic — clay, calcium and tuff, which is compacted volcanic ash — with a continental climate and a wide day-to-night swing that holds the acidity.
- Grapes
- Aglianico is southern Italy's answer to Nebbiolo. Probably Greek in origin, it buds early and ripens very late — harvested late October into November, among the last grapes picked in Italy — giving deep colour, gritty tannin and high acid.
Aglianico del Vulture Superiore is Basilicata's only DOCG. This grape is the region's entire top tier.
