Our own list names Grüner as the glass for charred alliums, and this is that dish. Grüner meets vegetal bitterness with its own white-pepper savouriness instead of clashing with it, the acid cuts the aioli, and the low alcohol keeps the harissa heat where it belongs.

Where to take them next

The detail — if they ask

Whole-bunch pressed with no maceration, fermented spontaneously on indigenous yeasts in stainless steel, then held on full lees for around three months. White pepper and lime zest over green apple, with the savoury edge that separates Grüner from every other dry white. Bone dry, no oak.

Fred Loimer took over the family estate at Langenlois in the late 1990s and built a black cube of a winery on top of a 150-year-old hand-dug loess cellar. Converted to biodynamics in 2006 and co-founded respekt-BIODYN the year after.
Region
The Kamptal is a collision zone — hot Pannonian air from the east meets cold Waldviertel air from the north-west. That day-to-night swing is why these wines carry ripe fruit and razor acidity at the same time.
Grapes
Austria's signature white. Its calling card is savoury — white pepper and green-herbal spice — set against grapefruit and green apple on high acid.
Soils
Gföhler gneiss under brown soil and chalk, 200–400 metres, south-facing with cool northern winds.

From 2025 every Kamptal DAC wine must be made from certified organic or sustainable grapes — an unusually strict rule for an appellation.
