Eighteen months on the lees gives the wine a brioche depth that meets the smoke in the roe, and the fine, persistent mousse scrubs the fried potato clean between mouthfuls. Salinity against salinity — the classic reason traditional-method fizz belongs at the start of the meal, not the end.

Pale, luminous salmon with a fine, persistent mousse. The nose lifts with wild strawberry, pink grapefruit and a whisper of brioche from 18 months on the lees. The palate is taut, dry and saline — bright red berry against a chalky mineral spine. Long, mouthwatering finish — every bit a serious wine in sparkling clothes.
